By 'it stays on' I guess you mean that the neon on the isolation switch stays on?
If so.....
As a kind 'old year' gesture may I suggest that you have put the supply onto the load side of the switch. You shouldnt have needed to touch the wiring to the switch if you were only truly just replacing the old cooker with a new one.....
I hope you've notified the local authority before you started work then?

I'll bet your new circuit isnt protected by an RCD as required by BS7671 (2008)??
