I have just stripped back a 30 year old floor and the boards look good. Should I use polyureathane or varnish?

PU looks great on a yacht! Not so good on a floor, that's my personal vote

If were having a vote, and nailing our colours to the mast I vote for good quality 100% Polyurethane lacquer in a matt sheen.
Much less cleaning than even the "newest evolutions" of hardwax oil long term, in my opinion, and more environment friendly than a hardwax oil

And if you are going to do something aggressive to the finish like drag a three wheeled piano across the surface your probably going to dent the wood regardless of the finish.

But then as Woodyoulike says, it depends upon your preferences.

use hardwax oil it is the dogs b*****ks when put on properly it will look better and last longer

avoid a glossy finish

It's known as "toffee apple" for a reason
