The pump shouldn't be turned down on a combi, it's supposed to be on 3

Why supply a 3 speed pump?

Because they're standard,== cheap.

But its a Grundfos unit on the junior badged as BOSCH other boilers use similar but are single speed?

I get around £120 a day for my desk job

& no doubt you get paid sick leave, holidays, bupa etc..... self employed installers (& employed come to that) get none of these benefits.
£120 a day for flying a desk, I think you might be a tad overpaid.

24I uses a 15/60 they allso use some 15/50 pumps on other boilers, if you turn the pump speed down it can lead to overheating of the domestic side of the heat exchanger,the domestic side of the heat ex is mains fed so can only cool down when the htg side cools down
