I would like to try a more methodical approach to understanding this and get me off the fence.

So, I want to run through a couple of scenarios. Starting with something pretty mild.

Say I was down the pub and was having an argument with a white bloke who is getting very angry and going red in the face. And I say "P1ss off you red faced moron". Is that racist.

if you read section 18 (7) it does say that it doesn't apply to racial hatred directed at your own race.

I have no idea what you are on about.
I’m saying gammon is not racist in the same way lobster is not racist. Whether they are both insulting, or one is more insulting than the other, is irrelevant.
