A very quick google search for the resistance of the 203 strike comes up with 8 (or 17)Ω which would be 3(1.4)A at 24V, my guess is the PSU is incapable of providing 3(1.4)A.
Supply to camera doorbell is 24v, but this is reduced to 12-15v which the manufacturer confirmed and multimeter shows once existing strike was removed. See pics.
All wiring from video monitor to doorbell to strike is 1mm2 two core flex.

A bell systems 203 strike ( AC ) is 30ohms …a DC strike is around 8ohms but I’ve known DC strike to be as high as 70ohms failed locked and failed unlocked …
