Do you think its possible to change this to a standard 60cm hob without causing any issues with the structural integrity of the worktop or proximity to the wall?

With no dimensions on the existing hob it is difficult to say. Anyway you should be asking a chippy not a sparks.

you need to look at the drawings of the new hob for the cutout dimensions. likely it will be smaller than the size of the top, so it sits on the worktop round the edges. But how much?
