I am planning to make some cabinet doors out of 9mm MDF with 9mm strips around the edges to create a shaker effect.

The width of doors will be around 610mm and height of 507mm.

My question is, would the doors be safe from warping with the extra thickness around the edges?
Shaker strips would likely be around 70-80mm wide.

MDF is pretty stable so it should be good. Regular MDF will warp if it gets damp. I'd use MR MDF for anything in the kitchen, in fact I use it for any job instead of regular MDF as it cuts much better and isn't as soft.

I made mine with 9mm+9mm mdf strips for the shaker style decorative part sandwiched together with glue making an 18mm thick door. End result looks good considering I’m not a carpenter. No warping has occurred, also used 9mm quadrant beading for the internal edge which gives it a finished look
