how many bags of cement/sand will i need for 30 posts?

should i get ' all in ' sand and stone bags?

what ratio should i use for the mix?

dot use cement and sand, use bags of post mix and hardcore. One bag per post, plus a few extra on top should do you.

Have a look down the list of threads as the topics been done to death recently!

All the fencers I know use a dry mix of 1 bag of all-in ballast for each post making a mix of 1 part cement to 6 parts ballast. Dampen the mix but DON'T get it wet.
You put the post in the hole then shovel in the damp mix and tamp it down with a fence post until it is firm.. When you've got them all level you go round with a hose and wet the mix. It will set overnight.

Don't try using wet concrete as your posts will tilt at all angles.
