I have a slight problem with a cooker install, all wiring is ok but the junction box (between cooker & double pole switch) will not fit behinnd my cooker. Question is can i fix it below the cooker level i.e. plinth height behind the cooker but under neath?

I guess we're talking about a cooker connection unit/outlet plate? As long as you are aware of safe zones (see the WIKI) then yes, there is no reason this work can't be carried out. It's worth knowing that because this work is in a kitchen it will be notifiable to your LABC under part P of the building regs, for such a small job it will be cheaper to have an electrician in who can self certify the work.
