With gas, the cooker hood removes combustion products, and I would assume strict rules as to how much and at what height extraction must take place, but with an electric induction hob as long as the hood is high enough not to activate the hob, I think about ¼ of an inch, then no danger, so the height is to suit the worker and process, I was never very good at tossing pancakes, and seem to remember one getting stuck on the ceiling, and latter falling on the cat. So even the ceiling height was too low in that case. But even when 6 foot, leaning over the cooker, one does not really need it 6 feet from the ground.
It is clearly a bit of common sense, and my hood does not stick out that far from the wall, and is more used to shed some light on the proceeding. The funnel is clearly not steep enough, as can see cat paw prints in the dust.
