Help on woodburning stove

Hi with a house move I am returning to a wood stove after about 10 years or so. New stove, chimney and liner installed. A couple of questions

1. The builder said I should "prove" the stove. Is that just a case of having a few fires (how many) with a slow burn or what?

2. Whilst looking on the internet for this, can find nothing, I came across a forum and spotted a statement saying the stove doors should always be closed. I never did this before. I closed the door, say 80% to get the fire started, then had them open until I wanted to shut the fire down. Views?

Oh, I think the fire is multi fuel but I will be burning logs.
