can someone please answer this question please?

Am i right in thinking that replacing wiring between 2 sockets myself is legal?
If i replace each wire separately and then add a couple of sockets (maybe extend the ring or just add spurs) replace old sockets and light switches and then get it all tested by a niceic eelctrician (for about £120) would that be ok? all i have to do then is get someone in to change the consumer unit?

you can only replace 1 'damaged' cable
 
And you can't extend the circuit or add sockets or spurs in a kitchen without notification anyway.

There are no crafty ways to circumvent the requirements imposed by the law - you either obey it or ignore it...
