Hi, the prv on my boiler is leaking from its outlet. I'm looking at changing it out but having just removed the front cover it is situated right at the back behind the pump. How easy is it to take out the pump to get access to the prv?

cheapest possible option is to call Ideal themselves and get a fix price engineer visit and repair. They are actually pretty reasonable and can do the service (they being there own engineers actually do carry out a service not just a visual and meter test.

You shouldn't be removing the cover of your boiler unless you're properly trained and capable of carrying out the regulation 26.9 checks for safety. The cover forms the safety room seal on your boiler, and therefore should not be removed by DIYers. Call someone out who can diagnose why the PRV had started dripping as well as replacing it. Boiler may need servicing, or a replacement expansion vessel, for example
