Looking for advice for type of kitchen tap that will create the least amount of splashing. I have a high pressure system. I find that my solid wood worktop gets stained over time by the water splashing up despite oiling it. Perhaps I am not using the proper oil.

Don't turn the tap up too high.
What about aereated taps, if that is the correct term.
if you have isolator valves fitted to the hot/cold you maybe able to turn them to reduce the flow a bit
