Note that LVT isn't waterproof unless very careful attention to detail is taken regarding the joints. The vinyl itself would be unaffected but the substrate could get progressively more damp, and that could be disastrous for wood. Even on certain substrates that can cope with water (poured screeds) salts may end up coming out that would distort the finish layer
I don't think I'd ever install wood laminate flooring in a bathroom. Have you considered a wood effect tile instead?
I've used quickstep impressive in a bathroom without issue https://www.quick-step.co.uk/en-gb/laminate/water-resistant-laminate, however if it's for a bathroom with kids and potential for a load of sloshed water, I wouldn't. Wood effect tiles are almost indistinguishable from laminate.
