Making good a round hole

What's the quickest and easiest method of making good old flue holes. Just brick it up or fill completely with cement?
Basic question I know
 
Inner leaf - mortar in a plug of masonry of similar size to the hole. Leave a lot of room for mortar, it's easier than having little room.

Outer leaf - toothe out damaged bricks and replace with whole ones using mortar and bricks to match.

I had to do one of these a couple of years back. The person that had originally cored the hole out had managed to hit FOUR bricks. Sigh.
