I know roof tiles have a minimum 75mm overlap and a 100mm maximum I was wondering can roof tiles be overlapped by 150mm etc if not why not

Don’t see why not, often done as the lazy option for the top course rather than cutting and drilling.

Dry verge units won't work. Other than that watch that the shape of the roof or the shape of the tiles still allows the nibs to hook over the battens.

If you are increasing a lap to 150mm, then unless its just two or three rows of tiles, then you may as well just take out a course and have a normal lap.
