Oak: Wax, oil etc

Hi Chaps and Chapesses.

I have just had some oak window board installed in my new kitchen. I've been reading up on the different types of treatment for oak such as oil, wax, varnish etc but I'm unsure on which direction to go. I appreciate that there is an element of personal taste involved but I am just as interested in the practical. The window sill is approx 6" from the sink and so it is at risk of the odd splash. I seem to be leaning towards oiling it but would appreciate any advice or info you may have.

Junkers rustic oil would be my preference

Danish oil is good for damp locations (that's why they use it on ships).
