Outhouse conversion

I have an old ouside toilet and coalshed attached to my bathroom. I want to convert these into a single utility/washroom. Plumbing can come straight from bathroom and I'll run a new circuit for electrics. Questions though. The toilet floor is quarry tiled, the coalshed cobbled. Presumably not waterproofed. Is it acceptable to dig these out, waterproof and cover in hardcore/concrete? Also, there's a dividing brick wall between the two, which I am pretty sure isn't load bearing. Is it safe to take this down (maybe up to roof height and support with beam)?
