The gaps between the bricks and the gap behind the brick is so large. I am not sure a gravel/sand/cement mix will hold. I was thinking to fill the holes with broken bricks and then use that as the base to point the wall

Do as you say for the large joints, stick some bits of broken brick in with the mortar. In stonework large joints can have small stones put in the joints.
It's known as pinning or galleting.
