What am I doing wrong?

Is the lamp holder making a poor contact with the wires or the lamp, thus creating excess heat?
If that were the case, would one not expect the lamp holder to also show signs of thermal damage (which, by implication, is not the case, if the OP is only replacing the cable)?

Kind Regards, John

Don't hear about fire-rated spots these last few years, since the advent of LED spots...
Fire-rated has nothing to do with the heat from the lamp - it is to do with maintaining the fire barrier so LED lamps do not alter this in any way.

I know.

I'm just pointing out just a few years ago fire-rated fittings seemed to be everywhere, and it's not such as issue now - presumably as many LED spots don't have a removable lamp.
