What should I use to cap wires?

You could save yourself a lot of effort by just putting the wall light back up, bound to look better than a blanking plate.

Flex buried in the wall is ok, yet strongly suggests a DIYer has done it.

For some reason DIYers are happier using flex rather than flat twin and earth cable.

Because it's easier. Because, well, it's better. Solid core is cheap.. that's about the sole advantage.

Yes, I had considered that. I would need to change the height slightly, because the fixing screws are either side of the centre and therefore in-line with the cable (which explains why the person who installed, almost severed the cable when doing so). But it is certainly an option, and would look better, as you say.

All three wires were originally connected to the corresponding wires in the fitting. They were twisted to their matching wire and then taped.

Presumably I could use the terminal strip to reconnect them, by simply attaching the matching wires into the other side of each terminal.

Would that be the best way to connect them? Or should I maybe consider Wago connectors?
 
If your wall light doesn't have a back plate, in the real world, wall lights are connected with 5 or 6 amp connector blocks, taped up with insulation tape.
