i have created a opening into the garage. And when we put door frame up had to remove a course of bricks to allow the door frame to reach floor level(it was half a course above floor level.

Given I removed a course how should I make it level? A piece of timber? Find some thin bricks?

Buy a piece of 220mm MDF bull nosed window board and make a tread/sill.

Or chop the next course of bricks off and run a load of soldier snap-headers (brick-on-edge) along.

Ok, so I got some spare roofing timber which I will shave to size, then put some window board on top. Then screw it down with some window frame screws. This sound ok?
