couple of years ago i lined the utility room (single brick) with dot & dab plasterboard but the plasterboards are getting damp & mouldy ,thinking about ripping out and re-doing it again but whats the best way?all advice welcome

Best to frame out, insulate, install vapour barrier/ foil backed boards, then skim.
Mechanical ventilation if you dont already have it would be a good idea.
