If you have lights controlled by a dimmer switch, can you replace the switch with an ordinary on/off light switch?

Yes again.
Unless your lighting circuit for that switch exceeds 10A which is the standard rocker switch manufacturers limit - although you can get 20A DP if you really want.
Problems occur when going the other way - since many dimmers place restrictions on the type of lamp you can use with them.
