I have just had a extension I put up I put wire in the roof before they fitted Insulation and plaster board I have cut the hole to put the light up and there is no space if I take the Insulation above the light will it be ok

No. It will leave a cold spot above each light where condensation will form and rot your roof timbers and plasterboard.

So what is the best solution

Option A. Surface mounted lighting

Option B. Construct the ceiling/roof in such a way that it's not necessary to cut holes in the insulation to fit recessed lighting.

OP didn't say he had or was going to cut holes in the insulation.
