Changing door handles, hole lotta trouble!

I want to change the knobs on my solid wood doors to levers, and have a large stumbling block. I presume I need to fill both of the cavities pictured with wood before I can install the new handles? Does anyone have any hot tips to get me through this dilemma?

with regards the first picture: i would be inclined to try the levers over the spindle first to see how they cover.

the second picture: i would glue a snug fitting wood block in the mortice hole first, drill my latch in then do any fine filling once the latch is in place.

did you know, the longer latches are used for knobs (3") and the shorter ones for levers (2-1/2").
