Kitchen area is 10'x10' with no external light, and dining area is 10'x12' with french doors / windows

Ceiling height is just under 8'

Because they are a pain in the ass to specify, install and maintain. They are crap at lighting much up.
The best, low energy light is a fluorescent tube.

Do you remember how everyone stuck dark brown cork tiles on their walls in the 70's?
Well thats how people will view the swiss cheese ceilings in a few years time:
"Oh downlights, thats SO turn of the century"....

(IMHO, of course)

But you do need to search out luminaires that don't look like this:

and preferably have HF control gear so you can dim them.
