Sorry if this sounds a little silly, but what exctly does earth bonding do? Is it for metal appliances, pipes, etc and that if a live wire touches them, it means the current goes to earth, as if you touched the metal appliance and it was not earthed, the current would go through you instead??

I suspect you're talking about earthing, which isn't the same thing as bonding. As you say, the purpose of earthing metal appliances is to ensure that the metal casing of a piece of apparatus does not become live at a dangerous voltage, should a live part come into contact with it.

The idea is to prevent the voltage on the metal casing exceeding 50v, the maximum allowed 'touch voltage', before enough current flows to trip the protective device for the circuit, be it a fuse, MCB, or RCD.
