how do i fix a door that keeps opening by itself?

is it the catch !!!

is it hinge bound [toutches the frame before the doors shuts]!!!!

does the door bark at you untill its approx 90deg to the shut position!!!

is the wall/ door plumb!!!!!!

remove the years of paint then you should have a 2mm gap all the way round

if your going to use a plane or belt sander rather than strip the paint only touch the door and not the frame

packing out the hinge? what does that mean?
(I'm still only an aprentice and don't know much at the moment )

Big-All knows more about this than i do... but, unscewing the hinge leaf, putting a thin sliver of e.g. ply or (worse) cardboard in the recess, and screwing the leaf back. It pushes the door away from the hinge side of the frame by the thickness of the packing.

if your door is hinge bound and you have 4mm clearence the other side you can as john says pack the hinges out by a bit more than the 2mm[probably 3mm as the door would be levering the hinges out the frame]

how much clearance do you have round the frame!!

a bowed frame can be equally as destructive and lead to the same problem as can a splayed frame, where the rebate is angled out slightly towards the architraves.

these latter problems usually need a planer involved.
