On the basis you are talking about either a ridge tile used on a hip or a traditional bonnet hip tile.
Standard practice by a workman is to bed the tiles on mortar and leave exposed mortar tidy and trowelled off keeping the tiles clean. It would not be necessary for him to return later when the mortar is going off to further point it up. There are also hip tiles that do not need to be bedded on any mortar - forgotten what these are called for the moment!
Standard practice by a cowboy may be to stuff mortar in as an after thought and see how much he can smear all over the tiles while doing it. Ideally using either an excessively wet mix or one without cement in it. Chose variations on the theme as necessary
