Solid wood worktop thicknesses

I'm shopping around for a solid wood worktop. Generally they're expensive and 40mm thick, but then ikea sell 28mm thick solid 'wood' (unspecified) for £50 for 3 metres. Generally 28mm seems to be around 30% cheaper than the 40mm stuff, but £50 for 3 metres is crazy cheap. What's the catch?

Also, there are some traders on eBay selling 28mm solid beech for good prices (e.g. £160 for 4 metres). Are there big disadvantages for going for 28mm versus 40mm?

Ikea beech tops are made from wood with a lot of defects & discolouration that I would cut out as waste as well as under thickness staves, poor comb joints etc
