Had the bathroom floor tiled now the door doesn't fit.

Door is 78" & the door way is now 77".

Can I trim about half an inch off the door jamb header and half an inch off the door?

Or should I start looking for a new door... (I'd rather not).

is your door solid of egg box type?

if you think an inch off the door will look ok then do that.
even with an egg box type door it is still possible to remove the desired amount then rebuild the bottom of the door.

if its prehung then off the bottom and as said fill in if an eggbox
otherwise you have to move the fixings 12mm on the frame and fill in the gap

It's a new door, oak veneer, engineered. But the bottom is exposed, no trim and looks like chipboard, I was surprised it was like that tbh. So you think I could cut the bottom with a circular saw or some such?

if its veneered then you have to score the veneer 1st with a knife,MAKING SURE YOU DONT SLIP AND SCORE ON THE WASTE SIDE.

this stops rip out of the veneer, then yes using a saw cut the required ammount off, then use a power planer to get down onto the line.
