wall high spots??

I am planning my bathroom tiling job and have 2 questions

1. in about 4 places i have vertical hight spots which if you place a tile over it causes the tile to rock about 5-10mm, the wall is plaster board what can i do about these high spots, we are using 600x300 tiles

2. i have some boxing in to do around toilet cistern and bath end where the shower will be what would be best for laying tiles to
