How to extend a kettle flex?

Junction box has no strain relief / cable clamping.
It is not waterproof and therefore in a puddle on the work surface it would present a hazard of shock or RDC trip.
Leads should not hang below work surface. It could be caught by someone moving there and the kettle full of scalding water could be pulled off the work surface onto the person.
If the lead has to be extended then an inline connector with strain relief should be used be used and fitted as close the plug as possible.
Consider attaching the connector to the wall.
Even if it was a normal type, you won't (or certainly shouldn't) find any long kettle leads for sale - they are short so that you can't fill the kettle while it is plugged in.
It is also a jug style, which typically have a design fault where boiling hot steam leaks from the hinge at the back of the lid, burning the hand of the person pouring the water out of it.
