Copper is very malleable and ductile and therefore would suggest not putting under undue strain when stripping back twin and earth. It is also liable to work harden with too much manipulation. I daresay this method has been used for years without incident but how do you know you haven`t stretched it? I can feel the copper CPC stretching if I were to pull it too hard so I`m sure you guys can.
As to the health and safety objection for using a knife - well now we all know don`t we that the world has gone completely f******g mad. In that case, do you have to wear googles in case one of the stripped back ends pokes you in the eye? As with all things you have to assess the risk - if the knife method is taught by a responsible lecturer then there can be no real reason why this method should not be used. We are all turning into a 'no-can do' bunch of flipping pansies.
