It would be greatly appreciated if anyone could recommend some decent transformer based undercabinet lighting.

I am looking for a light that is not too white and are of the single light type. Preferably something that is not too much of a spot would be ideal.

Your assistance would be greatly appreciated.

Does it have to be SELV?

Or can it be mains-fed?

Most SELV u/c fittings are spots of some description or other.

Get yerself to WICKS shed shop, they do an under cabinet light for £9.99, no transformer required

I would prefer them transformer type, so I really am looking for some single lamp types preferably with metal housings.

If you're looking for single lamp types, they will definitely be spots & a white light to boot.
