As well as all the other ingredients/techniques etc, alcohol does affect the flavour.

Brewdog do 3 different versions of their Hazy Jane IPA (not counting the alcohol-free, or the one with guava flavouring), at 5, 7.2, & 9.5%, and they taste quite different. Actually, I've just noticed they also do a 3% "Baby Hazy" which I've not seen anywhere yet - look forward to trying it.
