So anyway - two more suggestions for eggy cookery...

1) If you've got one of those egg poaching pans (which IMO should really be called coddling pans), try this:

1. Line the inside of the inserts with a layer of thin air dried ham, or with smoked salmon (rolled out to be thinner, if necessary
2. Add a layer of thinly sliced Emmental, or Gruyere, or flaked Parmesan
3. Crack in the egg and proceed as normal. Might need to use smaller eggs than normal to allow for the space taken up by the other items.

2) Tomato baked eggs make a good breakfast. i.e. eggs baked inside a hollowed out tomato.

Love these egg recipe ideas, thank you for sharing. My duck eggs have now got a new lease of life.

Yes - dried smoked chilli flakes.

Also good in omelettes, soup, mashed potato, pasta sauces.... or just pasta - cook it, and dress with a glug of garlic infused oil and some chipotle flakes, job done.
