So not a tortilla, then.

I had this in Spain, once - have done it myself quite a few times since.

1) Make an omelette, with whatever fillings you want.

2) Roll it up and put it in an individual baguette.
No not a tortilla. A bog standard omelette but runny on the top.
 
I disagree. You can add other ingredients to scrambled eggs.
Of course you can (fried bacon lardons are good :D ). Just like you can to omelettes.

I was just confused (still am) by the suggestion that a plain egg, cooked with no other ingredients, is "fantastic" if it's cooked by poaching, frying, boiling or scrambling, but "boring" if you make an omelette.

But no point to continuing to beat a dead egg.

I like adding fresh chives to scrambly eggs. Or parsley. Or tarragon.
