...that you could see. But melting ice turns to water.

Ice blocks the flow of cold air through the ducts.

Have you seen any evidence that the blockage has gone?

Maybe it hasn't melted yet. Or maybe it is draining somewhere you can't see. Frost free freezers drain the melt water out through a gutter and pipe usually round the back where it can evaporate from the heat of the motor,

I did feel in the drip tray at the back on the last defrost but it was dry. What baffles me is how it can reach 5 degrees and swing up to 8 Getting down to 5 surely suggests ice has cleared.

With respect, you really need to remove that white back cover. Run a hair drier over it for a few minutes. If it seems to be stuck, use the hair drier for a bit longer. It will help you to narrow down the possible fault.

Checking the drip tray really isn't going to help if there is a massive lump of ice behind the cover.
 
The drip tray may not actually get any water into it if the tube from the bottom of the back of the freezer has got blocked with matter/stuff.
Poking something long and flexible down it might help prove it's clear.
 
Well after a week of it averaging around 5-7 degrees it is now back up to 12. Why would it get worse ?
