so you close the jaws, then tighten the screw so the jaws are just too tight to fit the bolt, then open the jaws, close them tightly on the bolt so they lock, right?

No, you adjust the screw, tighten the gripes on the bolt. Test. If it rounds, release the grips, tighten screw slightly and try again.
 
Get two nuts that fit them, wind them down a few turns, lock them together with a pair of spanners, back them out like you would a normal bolt.
