Immersion hot water not lasting long enough!

That looks like it should be well worth your while, to swap to Octopus Eco 7. The thing with E7, is to maximise the transfer as much as possible of your consumption, to those E7 hours, and minimise what you use outside those hours. Those consumption graphs, look as if you are doing that already.
 
So you are on day/night tariff - which is as it should be, and it looks like it's using power during the night when it's cheaper, as it should be.
 
You might want to double check that the time of high usage is the same as the time of the night rate

It looks to me like the storage heaters are set to output heat 6:30am to 9am, and 3pm to 11pm (can someone double check those screenshots?) - is that when you actually want them to be outputting heat? (If not then it would be good to change those times)

They are currently set to home all day, and the screen shot below shows the times they have been set to. This was not done by me and I have been wondering if the times should be altered slightly. Below is from the living room heater (1 of 2 in that room).

When does the night rate run from and to?
Screenshot of what Google says but doesn’t mention about Fixed Tariff times but I’m assuming they could be the same or perhaps they are not? Confused dot com lol

Usually you'd want heating at different times in different rooms.

Are you sure on that? It looks like he's on a simple, 12 month Fix, charging the same, night, and day rate..

Yeah good point. I was given nothing regarding these heaters but I did find a manual online that I believe relates to their models:

I would suggest don't ask Google - ask Octopus, in writing (email for example).

If the period of cheap rate night time is longer than the period the immersion comes on, and you haven't enough hot water, then I'd suggest
-match the hot water timer to your cheap rate tariff timer
-Check/raise the immersion heater stat (as suggested by others above)
