As on screenshots above with the kWh data per pink bar does not state “off peak” where as my friend’s does, and his home is using the new heat pump. But my data doesn’t highlight ‘off peak’ ??

I would suggest don't ask Google - ask Octopus, in writing (email for example).
If the period of cheap rate night time is longer than the period the immersion comes on, and you haven't enough hot water, then I'd suggest
-match the hot water timer to your cheap rate tariff timer
-Check/raise the immersion heater stat (as suggested by others above)

I’m definitely going to give Octopus a call and see what they say. Also, tomorrow I have a Clarion ‘operative’ coming in the morning regarding the hot water pressure, so I will be sure to update here what happens, hopefully will be a fix! But I don’t hold out much hope as the operatives from Clarion are usually miserable and don’t like to go into detail - well tomorrow I’ll be pressing for detail as best as I can at least.
Looking at the maths from one of your screenshots: roughly 30kWh costing roughly £4 means you're paying just over 13p/kWh which strongly suggests that the economy 7 tariff is working as it should be.

That’s what I was lead to believe that I’m on an economy 7 tariff, still might be worth me calling Octopus to see if there is a better tariff to go on.

I have no idea, but the operative from Clarion coming tomorrow I hope to get him to check all this. But when you say 30 kWh per night it’s actually showing the total usage for that day not just during the night
Looking at the graph if the immersion heater and storage heaters switched on together I would a higher consumption for about 3 or 4 hours. The immersion is probably 3 kw and storage heaters are going to be 1 to 3 kw.

I suspect like you there could be more to this too, what it is exactly I don’t yet know.
The heaters are 1kW if this helps, the below screenshot info suggests mine are app-controlled, they are not, I think those are only for the WiFi-enabled models
...unless setting the thermostats higher effectively shifts electricity use into a lower rate time of day, by reducing the need to boost at high rate times.
