
Well, I've been banned from posting in my own thread as well as a fair few others until July but allowed to post elsewhere.
Had another go today. Perfect!Did a bit of baking today. Mrs Mottie is out with her sister on their regular 'pick up mum from the care home and take her shopping' days so as she has to stick to a gluten free diet and, tbh, most gluten free bread is shyte, I decided to have a go at making some rolls. I had all the ingredients here.

Didn’t quite go as planned for two reasons: 1. I used an un greased glass bowl to bake them in instead of a greased tin and 2. I forgot to brush them with melted butter before putting them in the oven. I remembered when they were almost done so added it a bit too late.

Despite that, they still came out better than any white roll we've bought but I would say that they were more like a scone than a roll. If I gave you one with some cream and some jam, you wouldn’t know.

Well, Mrs Mottie loved it but she said she felt 'glutened' and asked me if I was sure I had used gluten free flour. Of course, I did but this morning I checked the yeast. Oh bollux!Had another go today. Perfect!

Yeah, just been out and bought some Allison yeast. That’s naturally gluten free, the other stuff (Sainsbury’s own, which I’ve used for years) isn't. I check everything with an app but never even thought of checking yeast.I have heard it only takes a tiny bit. But that is still a surprise.
Was it like normal bread, or more cakey/sconey?
That’s very good, it’s difficult to get that lightness without gluten.
Almost normal when warm. A bit cakey when cold. Can be frozen and then warmed up for a few minutes when thawed.
I just followed a recipe by a gluten free blogger. It’s much better than any GF white bread we've bought before but again, only when warm.If you can commercialise it, you will make millions!
