We've bought an induction hob (a Neff T41D82X2) which I'm guessing needs to be wired to a CCU, then from that to the CU. Due to having the ceiling off at the moment, we want to put the cables in place before the ceiling is plastered, so a sparky can come in and wire it all up etc.

What cable do we need to put in place from the CU to the CCU?

Additionally, we're installing two single ovens (Whirlpool AKZM 755) which say they can be wired to 13A plugs and plugged in as normal. Are we ok to do that given there will be two of them, or is this going to be overloading the circuit?

Thanks

If you are installing a new circuit, this would require building control notification and the electrician will want to see the method of installation, so the cable must be left visible along the route. The cable if buried in wall will likely require RCD protection, does your consumer unit facilitate for RCD protection?
The cable CSA/size would depend on the rating of the hob, the method that the cable is installed and the length of the cable route.
Generally 6mm2 twin and earth is suitable!
Two ovens, both 13A plugs, loading issues are possible depending of the circuit rating that they are to be plugged in to, and the demand on this circuit that is already being loaded.
If you have ceiling down, I would consider running a circuit for the ovens.
