What are you having for breakfast?

Gave it a shot this morning. I separated the whites and yolks from two eggs, whipped up the whites to a firm froth then folded the yolks in before making a frothy omelette. Came unstuck when I tried to flip it though so looked a bit of a mess. Placed that on top of my porridge and tucked in. Different! Definitely filling though. (y)

I wondered what a frothy omelette was! But I get it now. It's what Delia calls a soufflé omelette. I like mine with damson jam. I have to say the porridge and omelette combo sounds quite weird.
 
Doesn't Delia use fresh cream?? Disciple of Escoffier on scrambled eggs iirc from student days.
I just use a little cordless whisk on a single Extra large egg (these things can be monsters because there's no upper weight limit on the category, so they can be 110g). A spot of milk - not too much - makes them froth up more . One necessary thing, I think with all pans, is a lid. The one-egg pan is tiny and without one, only 12cm or so across, so I put an oversize lid rather crookedly over it. The gas flames go up the side of the pan and inside the lid, so the top gets some cooking. I end up with a muffin shaped thing
Yes I thought it would be odd, but a slightly salty herby egg, sharing the spoon with the porridge, goes down well for me. Decent nutritionally too, I think. It's bulk with protein and Vit D without adding carby fatty toast and butter.
I have tried a few blueberries in the porridge, which is usually fine, but does not work with the egg!

You can certainly tell from the colour those eggs weren't bought in a shop.
Actually, they were from a box of a dozen standard large eggs that I bought from Lidl and brought down with us. I was surprised at the colour too. Sometimes you get a surprise with Lidl standard eggs - sometimes they are white shelled which is unusual these days. The cottage owner left us half a dozen eggs in the welcome pack. They have hens and I thought they would be their own but they were date stamped!

Before I stopped working I had several customers who kept chickens so I had a good supply of eggs, always with that dark yolk like yours. Ones we buy in shops, even ones that claim to be free range are always much paler.
