What should I know before I create my own custom bathroom wall niche?
I appreciate all the practical points. End of the day, we want to mainly do it for aesthetic reasons as we think it looks nice.

You're basically creating a mini shower tray half way up the wall, inside a timber structure. It's asking a lot of the various seals that are being required to defy gravity and physics.
Not tanking no. And its high level with very little weight imparted upon it. Sounds to me like he's adequately mitigating any risks.
Not necessarily. A lot less risky than other locations in the shower.

These days they don't put soap bars there, they fill them with all sorts of pumped liquid bottles that claim to do different things.

We've done loads, especially where windows have been bricked up etc. On outside walls it's important to have continuity of insulation.
Lambs do a ready cut gauged brick niche now to save you the hours of setting out and cutting.
