It sounds like you are in a financial position worthwhile using professional help (lucky you!). The fact that you don't have children makes things a little easier. With private client advisors (e.g. estate wealth managers etc) I think it's a bit of a hit and miss, i.e. same with trades! Go with a recommendation if you can and the cheapest ones will get you equivalent service.
I have used one and paid about ~1600 for some email advice and an ultimate 5 page document... I did it for peace of mind, in particular to manage where my son would go, if something happened to both of his parents. I think that was the most important reason for me to use a solicitor.
Regarding executor, mine allowed to have more than one. So for my assets I used my sister and the solicitor's trust and my wife's side did the same with her sister. We did this because all our direct families live abroad and they might not be familiar with UK laws etc. So the idea is to get a person close to you for the personal family topics, to work with a professional for the legal side. And there is no fixed split here, so the trust may also not get involved if your family member is able to manage all.
