**** me, more alkies in here than a Weatherspoon's.
Beef looks spot on, well as does everything else
I use a meat thermometer. The thermometer says beef will be cooked when at. 62°C. Following a Raymond Blanc method, after browning the meat before putting it in the oven at 160°, I check it constantly and remove it when it reaches 4O°C in the centre of the joint. Cover with foil and leave to rest for at least 1 hour. Perfect medium rare beef.Beef looks spot on,

I'd find it hard to keep down. Australian wines seem to be coming on.I had this with my salmon stir fry tonight. Good old basic stuff. £4.50 I found it crisp and delicate. Dry, with citrus, melon and fruit flavours.
