Beef looks spot on,
I use a meat thermometer. The thermometer says beef will be cooked when at. 62°C. Following a Raymond Blanc method, after browning the meat before putting it in the oven at 160°, I check it constantly and remove it when it reaches 4O°C in the centre of the joint. Cover with foil and leave to rest for at least 1 hour. Perfect medium rare beef. :)

I had this with my salmon stir fry tonight. Good old basic dry white. £4.50 at Sainsbury’s. I found it crisp and delicate. Quite dry, with citrus, melon and fruit flavours. :rolleyes:

G&T while microwaving a Bento ready meal. Malbec during the meal. Disaster though as I dropped the curry on the floor, narrowly missing the dog.
